The Lunch that was Almost Forgotten
It’s a rare day when I forget to eat a meal, especially one as pivotal as lunch. Shame. Shame on me.
To the left: mixed green salad with radish, cucumber and home-grown tomatoes, herbed feta and a Dijon vinaigrette made by Sue, the mother of my BF. To the right: brown rice risotto cakes with mushrooms, asparagus and parmesan, topped with kosher salt.
This risotto from the other night was a huge massive pain in the ass to make because brown rice takes forever to cook up when you’re doing it risotto-style. And then the filet of sole that I made to accompany it broke, like a lot, and it was generally terrible.
That’s what a salad should be. Except maybe with some pine nuts or something.
